Scotty Olson, Professional Chef | Certified Spinning and Fitball™ Instructor. A classically trained chef, Scotty has cooked for the rich and famous around the world, catered large charity events, and served as a consultant to restaurants and vineyards.

After moving back to his hometown of Longmont, Colorado, he visited his cardiologist, Dr. Jamie Doucet. A routine checkup showed that Scotty was in the early stages of heart disease. This inspired him to radically change his exercise habits. He started working out with a personal trainer and became a certified spinning and Fitball instructor. Scotty is now an avid cyclist, outdoorsman, and recreational sport enthusiast.

But what about eating in a more healthful way? Scotty teamed up with registered dietitian, Lisa High, and worked on changing his eating  habits. Combining her knowledge of nutrition with his French culinary  training and experience, Scotty started to cook up healthy but delicious meals for himself and friends.

This was easy to do – after all he’s a professional chef. But what about his spinning and Fitball clients? Busy with their careers and families, they had no time to shop or cook, and were sabotaging their workouts by picking up fast food on their way home from the gym. After adopting a healthy lifestyle, Scotty wanted to help others do the same. “Eating healthy doesn’t mean eating boring, tasteless meals,” he says. “You can meet your weight loss goals and still eat delicious and satisfying meals.”

Thus Scotty’s Fitness Food was born. Fitness Food’s mission is to help Americans change the way they eat by offering healthy, affordable, and delicious take-away meals.


Lisa High, MS, RD | Lisa is a registered dietitian with over 10 years of experience in the field of nutrition. With her BS in Nutrition and Food Management and a MS degree in Gerontology, she focuses on disease prevention and weight  management.

Lisa worked for six years at the famous Canyon Ranch Health Resort in Tucson, Arizona, and was the sole nutritionist at the South Denver  Cardiology Center. Currently, she’s the owner of Essential Nutrition, LLC in Boulder, Colorado where she offers one-on-one nutritional consultations, group workshops, and supermarket shopping tours for weight loss, food allergies, heart health, healthy pregnancy, and blood sugar management.  She also works at the Colorado Cardiovascular Center in Boulder.

Lisa serves as the Director of Nutrition for the Shape Your Life Program, (www.shapeyourlife.tv) as featured in Shape magazine. She is co-author of “Better Breast Health for Life!” and taught gluten-free cooking classes at Wild Oats Natural Markets and Whole Foods.

She is often interviewed for her expert nutrition advice by the local and national press.She is a firm believer in the healing powers of food and good nutrition, and the principles of Functional Medicine.


Jamie Doucet, MD | Jamie specializes in the prevention of coronary artery disease. He has a patient oriented approach that is tailored to the specific needs of each individual. He and his patients work together in a team effort to  reduce cardiovascular risk through education, lifestyle modification, and  pharmacological intervention.

Jamie completed his training at Baylor College of Medicine/Texas Heart  Institute in Houston, one of the premier heart centers in the US. He is board certified in both cardiology and interventional cardiology by the American Board of Internal Medicine.

For over six years, Jamie has practiced medicine in the Boulder, Colorado area. He performs balloon angioplasty, stent placement, intervascular  ultrasound and pacemaker/defibrillator implantation. He also specializes in nuclear cardiology and peripheral vascular disease. He is one of a few physicians in Colorado trained in using the Fox Hollow atherectomy device to treat peripheral artery occlusions.

Jamie is on staff at Boulder Community Hospital, Longmont United  Hospital, Avista Hospital, and Exempla Good Samaritan Hospital.


Jodi Cole | Jodi is a competitive tri-athlete and road cyclist. She has also played professional soccer. In her 23 years as a certified personal trainer, she has specialized in sports specific training and post injury/post  surgery strength therapy. Her clients include professional baseball players,  Olympic swimmers, professional soccer players, and competitive cyclists.

She holds special certifications in spinal cord injury recovery, technical heart rate training, and is an endorphin therapist, certified cycling coach, and certified spinning instructor.


Chris Berger | Chris is the owner of Anytime Fitness in Longmont, Colorado. He has a long professional background in working with clients at fitness and health facilities around the U.S. He is a certified exercise coach, sport yoga  instructor, personal trainer, nutrition and lifestyle coach, massage  technician, and strength and conditioning specialist. He also held the title of Mr. Colorado.

Chris is a great asset to the Fitness Food team. With his extensive experience in the health and fitness industries, he brings great insight to clients’ needs and challenges.
